Ingredients 1 lb (500 g) ground pork (use pork butt) 10 oz (300 g) lean ground beef (chuck, round or shank) 3/4 Tbsp salt 1/2 Tbsp sugar 3/4 tsp cayenne pepper 1 Tbsp sweet paprika 1 tsp crushed anise seed 3 garlic cloves, finely minced 2 Tbsp red wine vinegar 1/3 tsp ground black pepper
Directions In a large bowl add all the ingredients and stir well using a wooden spoon at the beginning, then your hands, until all the spices are distributed evenly throughout the pork and beef and the sausage mixture is uniform. Cover with plastic wrap and refrigerate for a minimum of 6 hours. The sausage mixture can keep for up to 24 hours in the refrigerator of several days in the freezer.
