Preparation time: 10 minutes, Cooking time: 10 minutes, Serves: 4

Ingredients

1 lb lean ground beef

1/4 cup all-purpose flour
1 Tbsp chili powder
1 tsp paprika
1/2 tsp dried oregano
1/2 tsp dried minced onion
1/2 tsp garlic powder
1 tsp salt
1/2 cup water

1 (16 oz.) can refried beans (you can use 2 cups of homemade refried beans if you prefer)

8 (10-inch) flour tortillas

1/2 cup enchilada sauce
1 cup sour cream
2 cups shredded lettuce
2 cups shredded cheddar cheese
1 medium tomato, diced
1/2 cup thinly sliced onion

Directions

Prepare the beef mixture
In a medium bowl, combine the ground beef, flour, chili powder, paprika, dried oregano, minced onion, garlic powder and salt. Mix all ingredients well using your hands, until well combined.

Cook the enchiladas beef filling
Add the beef mixture in a skillet or frying pan over medium heat. Pour in the water and stir well. Cook for 5 to 10 minutes or until the beef is browned, stirring occationally and breaking up any lumps that form. At the end, the beef mixture should be sticky, pasty and smooth, with no large meat chunks.

While the beef mixture is cooking, heat up the refried beans in the microwave or over medium heat in another saucepan.

Heat the flour tortillas in the oven or microwave.

Assemble the burritos
Take a tortilla and spread about 1/8th of the beef mixture and 1/2 cup of the refried beans along the center. Top with a tablespoon of the enchilada souce, 1 or 2 tablespoons of sour cream, some of the lettuce, cheese, tomato and onion. Roll the tortilla up and serve.
