Minestrone Soup

Ingredients

- 1 cup peas 240 ml peas
- 2 zucchini, sliced and quartered 2 zucchini, sliced and quartered
- 1/4 head cabbage 0.25 head cabbage
- 1/2 cup canned chick peas 120 ml canned chick peas
- 1/2 cup canned kidney beans 120 ml canned kidney beans
- 1 cup ditalini (or similar, small shaped pasta) 240 ml ditalini (or similar, small shaped pasta)
Method
Fry the minced carrot, minced onion, and salt pork in the olive oil, until the onions are transluscent. Add sage and canned tomatoes and let them cook for a few minutes. Add the water and season with salt and freshly ground black pepper to taste.
Add the 2 potatoes, sliced carrot and celery, and cauliflower and simmer for 10 minutes.
Add the thinly sliced potato, the spinach, escarole, onion, endive, peas, zucchini, and cabbage. Let cook for
15 minutes.
Add the chick peas, kidney beans and ditalini and cook for another 10 minutes.
Serve hot.
Add the 2 potatoes, sliced carrot and celery, and cauliflower and simmer for 10 minutes.
Add the thinly sliced potato, the spinach, escarole, onion, endive, peas, zucchini, and cabbage. Let cook for
15 minutes.
Add the chick peas, kidney beans and ditalini and cook for another 10 minutes.
Serve hot.
