Easy homemade sweet pickles

Ingredients
- 1 medium onion, thinly sliced 1 medium onion, thinly sliced
- 2 cucumbers, thinly sliced 2 cucumbers, thinly sliced
- 1/2 cup red wine vinegar 120 ml red wine vinegar
- 5 tbsp water 74 ml water
- 4 tbsp sugar 59 ml sugar
- 1/2 tsp salt 2.5 ml salt
- Freshly ground black pepper to taste Freshly ground black pepper to taste
Method
In a bowl add the onion and cucumbers. In a separate bowl add the vinegar, water, sugar, salt, and pepper and mix well until the sugar is dissolved. Pour over the onions and cucumbers, cover the bowl with plastic wrap and refrigerate for at least 24 hours before serving.
