Strawberry mascarpone tart

Ingredients
- 1 sheet frozen puff pastry, thawed 1 sheet frozen puff pastry, thawed
- 8 oz mascarpone cheese (softened) 225 g mascarpone cheese (softened)
- 1 cup sugar 240 ml sugar
- 1 tbsp fresh lemon juice 15 ml fresh lemon juice
- 1 cup whipping cream (whipped) 240 ml whipping cream (whipped)
- Fresh strawberries, stemmed and sliced in half Fresh strawberries, stemmed and sliced in half
- Icing sugar (for dusting) Icing sugar (for dusting)
Method
Preheat oven to 400 degrees F.
Line a 9-inch tart pan with removable bottom with the puff pastry sheet, trimming the latter to fit. Place in the oven and bake for 15 minutes, until the pastry is golden brown. Remove from the oven and deflate by placing a pie plate and a heavy item on top of the crust. Set aside to cool.
Combine the mascarpone, sugar and lemon juice in a medium bowl. Fold in the whipped cream and spread over the cooled puff pastry crust. Refrigerate until ready to serve.
Before serving, decorate the top with sliced fresh strawberries and lightly dust with icing sugar.
