Vinaigrette with capers

Ingredients
- 1/2 cup extra virgin olive oil 120 ml extra virgin olive oil
- 1/3 clove garlic (minced) 0.33 clove garlic (minced)
- 1 tbsp fresh parsley 15 ml fresh parsley
- 2 tbsp lemon juice 30 ml lemon juice
- 2 tbsp rice wine vinegar 30 ml rice wine vinegar
- 2 tbsp capers (drained) 30 ml capers (drained)
- 1/4 tsp Dijon mustard 1.2 ml Dijon mustard
- 1/4 tsp black pepper 1.2 ml black pepper
- Salt to taste Salt to taste
Method
Combine all the ingredients in a blender and process for about a minute at high speed until the dressing is well blended.
Chill for several hours in the refrigerator and shake well before using.

This dressing is great with boild or steamed vegetables.
