Creamy Ceasar style dressing with garlic infused oil

Ingredients
- 1/2 cup vegetable oil 120 ml vegetable oil
- 1 clove garlic (crushed) 1 clove garlic (crushed)
- 2 tbsp red wine vinegar 30 ml red wine vinegar
- 2 tbsp lemon juice 30 ml lemon juice
- 1/8 tsp Worcestershire sauce 0.6 ml Worcestershire sauce
- 1/4 tsp dry mustard 1.2 ml dry mustard
- 2 egg yolks 2 egg yolks
Method
To make the garlic infused olive oil
Add the vegetable oil and garlic in a jar with tight fitting lid. Refrigerate for several hours or overnight for best results. Open the jar, discard the garlic and set aside.
In a small saucepan over very low heat, add the remaining ingredients (red wine vinegar, lemon juice, Worcestershire sauce, mustard and egg yolks) and cook, stirring constantly, until the mixture thickens and bubbles around the edges. Remove from the heat and let cool for 15 - 20 minutes. Pour the sauce and the garlic infused oil into a blender and process until well combined and smooth. Pour back into the jar, cover and chill until used.
Makes about 2/3 cup.
