Honey and lemon salad dressing

Ingredients
- 1/4 cup heavy cream 60 ml heavy cream
- 1/2 cup mayonnaise (use low fat mayonnaise for a lighter version) 120 ml mayonnaise (use low fat mayonnaise for a lighter version)
- 2 tbsp lemon juice 30 ml lemon juice
- 1/4 cup honey 60 ml honey
- 1/2 garlic clove, minced 1/2 garlic clove, minced
- 1/2 tsp dried dill (or 1 Tbsp dill, finely chopped) 2.5 ml dried dill (or 1 Tbsp dill, finely chopped)
- Salt and freshly ground black pepper to taste Salt and freshly ground black pepper to taste
Method
In a bowl add the mayonnaise and cream and whip using a wire whisk until the mixture forms soft peaks. Set aside.
In another bowl combine the honey with the lemon juice. Beat with an electric mixer on medium speed until well blended. Add mayonnaise and sour cream mixture and beat on low speed until well blended.
Cover with plastic wrap and refrigerate for several hours until needed.
The above ingredients will make about 1 cup of the sauce.

Cook's notes
Dill goes well with fish. If you do not like dill or you would like to experiment, you can try other herbs, fresh or dried, like oregano, thyme, tarragon, parsley, fennel seeds, chives etc.
