Coriander, caper and lime salad dressing

Ingredients

- 4 tbsp olive oil 59 ml olive oil
- 1 tsp capers 4.9 ml capers
- 3 tbsp finely chopped fresh coriander 44 ml finely chopped fresh coriander

Method
Place the mustard, lime rind, lime juice, garlic and white wine vinegar in a bowl and mix well. Slowly start pouring in the olive oil, whisking constantly, until well emulsified. Stir in the capers and coriander and season with salt black pepper to taste.
Cover with plastic wrap and refrigerate for a few hours before using.
The ingredients above make about 1 cup of salad dressing.
