Mexican fried rice

Ingredients
- 4 tbsp vegetable oil 59 ml vegetable oil
- 2 cup rice (long grain, white, uncooked rice) 480 ml rice (long grain, white, uncooked rice)
- 1 cup finely chopped onion 240 ml finely chopped onion
- 1 cup finely chopped bell pepper (red, green, yellow or combination) 240 ml finely chopped bell pepper (red, green, yellow or combination)
- 2 clove garlic (minced) 2 clove garlic (minced)
- 4 cup chicken broth 960 ml chicken broth
- 1 cup tomato puree 240 ml tomato puree
- 2 tsp salt (or to taste) 9.9 ml salt (or to taste)
Method
In a frying pan add the vegetable oil and bring to a heat. Add the rice
and cook until it turns golden. Add the onion, bell
pepper, and garlic and saute, turting often. Add the chicken broth and
tomato puree, season with salt and cook for 15 - 20 minutes on very low
heat until the rice is tender and the liquid has been absorbed. Serve
with other typical Mexican dishes such as chimichangas, burritos,
enchiladas e.t.c.

Thanks for the recipe! I added some chopped tomatoes and green onions at the end. So good.
