Classic Guacamole (with Ancho chiles)

An original Mexican guacamole dip using Ancho chiles. Use with typical Mexican dishes such as fajitas or chimichangas.

Ingredients

  • 2 ripe avocados, seeded, peeled and cut into small chunks
  • 1 tbsp lime juice
  • 1 clove garlic (mashed)
  • 2 Ancho chiles, soaked in water, drained and finely chopped
  • 1 small onion, finely chopped
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1 medium tomato, finely diced

Method

Soak the Ancho chiles in hot water for 15 minutes. Drain and finely chop.

In a bowl combine the avocados, lime juice, garlic, ancho chiles, onion, olive oil and salt. Using a fork, roughly mash and combine all ingredients. Add the diced tomato and stir well.

Cover with plastic foil and refrigerate for at least 30 minutes to allow the flavours to develop.
