No ratings yet 25 min Serves 4 Italian
An easy orange chicken recipe that can be ready in as little as 15 minutes. Boneless chicken breasts are sauteed in butter and served with an oranged flavored sauce made with onions, fresh orange juice and zest, tarragon and cream.

Ingredients

  • 4 boneless chicken breast halves, skinned
  • 2 tbsp butter
  • Orange chicken sauce
  • 1 medium onion, finely chopped
  • The zest of 1 orange
  • 1 cup fresh orange juice
  • 1/2 tsp dried tarragon (crumbled)
  • 1 cup single cream
  • Salt and pepper to taste

Method

Cook the chicken breasts
Wrap the chicken breasts in plastic wrap and using a rolling pin or similar, flatten them out a bit.

In a large skillet over medium heat melt the butter and saute the chicken breasts (in batches) until brown on both sides and cooked through, for 8 to 10 minutes. Remove, set aside and keep warm.

Prepare the orange chicken sauce
In the same skillet add the onion and saute for a few minutes until transluscent, but not brown. Add the orange juice, zest, tarragon, and cream. Season with salt and black pepper, to taste. Cook for 6 to 8 minutes, stirring frequently, until the sauce is slightly thickened.

Serve chicken breasts in individual dishes pouring some of the orange sauce over, together with rice or fried poatoes.
