Steak Tampiquena, Tex Mex Style

Ingredients
- 2 tbsp olive oil 30 ml olive oil

- 4 slice cheddar or Monterey Jack cheese 4 slice cheddar or Monterey Jack cheese
Method
Preheat gril.
Heat olive oil in large frying pan. Add the onion, garlic and tomatoes and saute for 3-4 minutes, until tender. Set aside and keep warm.
Salt both sides of each steak. Place steaks on grill over medium-hot to hot flames. Cook for about five minutes, without flipping. Flip and spoon some of the tomato, onion and garlic mixture over the cooked side of the steak. Top with a few strips of chili, to taste. Place a slice of cheese on top and continue cooking for 4-5 minutes more, until the cheese is melted and the steak is cooked through.
Serve with jacked potatoes and guacamole, salsa or your favorite Mexican condiments.
