Carne Asada Tacos

Ingredients
- 2 cup finely diced flank or skirt steak 480 ml finely diced flank or skirt steak
- 16 corn tortillas 16 corn tortillas
- 1/2 cup onion (diced) 120 ml onion (diced)
- 1/2 cup coriander leaves (chopped) 120 ml coriander leaves (chopped)
- 2–3 tbsp vegetable oil 30–44 ml vegetable oil

Method
Heat oil in a medium pan over high heat. Cook the beef, turning frequently, for 8-10 minutes, or until the edges
become brown and crispy. Season with salt and black pepper to taste.
Stack two tortillas, one on top of the other and top with the hot beef, chopped onions and cilantro. Fold the two tortillas in half, then wrap tightly in aluminum foil. Let it sit for at least 5 minutes, until the tortillas have warmed up.
Serve with salsa or guacamole.
