Preserved lemons

Ingredients
- 12 lemons, whole 12 lemons, whole
- 12 tbsp salt 175 ml salt
- 6 tsp sugar 30 ml sugar
- Lemon juice, freshly squeezed Lemon juice, freshly squeezed
Method
Wash the lemons and dry them using a towel.
Make deep cuts around each of the lemons, lengthwise (make 4 cuts on each lemon).
In a large jar (large enough to hold the 12 lemons), add each time one lemon, a teaspoon of salt and half a teaspoon of sugar. Repeat this process for each one of the lemons, pushing the lemons down every time, to make room, and get some of the lemon juice out. Once you have placed all the lemons, salt and sugar in the jar, squeeze fresh lemon juice over, to cover the lemons.
Seal the jar and shake well.
Store the jar in a cupboard for at least one month, shaking it every two to three days, to get the juices evenly distributed.
When the lemons are ready, store them in the refrigerator. They will keep for several months.
