The best pasta with shrimp

Ingredients
- 1 1/8 lb fresh shrimp (1 lb; or prawns) 500 g fresh shrimp (1 lb; or prawns)
- 4–6 tbsp olive oil 59–89 ml olive oil

- 1 1/8 lb spaghetti (1 lb) 500 g spaghetti (1 lb)

Method
Place enough water in a dppe cooking pot and place it under high heat.
Wash the shrimp or prawns and tomatoes. Remove the shell of the shrimp but keep the tail and head on. Squeeze the tomatoes with your palms to get rid of most of the liquid, then chop them up roughly and set aside.
When the water comes to a boil, add salt and the pasta. Cook the pasta al dente (check cooking time on the package), stirring a few times during the first 2 to 3 minutes. It usually takes 7 to 11 minutes for the pasta to cook, depending on the brand you are using.
While the pasta is cooking place a large saucepan over medium high heat. Add the olive oil, onion, garlic, chili flakes and oregano. Cook for 3 to 4 minutes, stirring occationally. Make sure you do not burn the garlic.
Add the shrimps or prawns and cook for 1 to 2 more minutes, stirring a few more times. Add the chopped tomatoes, season with salt and black pepper and stir. Cook for 2 to 3 minutes more, remove from the heat and set aside.
When the pasta is cooked, drain and pour into the shrimp sauce. Toss well, adding a bit more olive oil if necessary.
Serve with freshly grated Parmesan cheese and a few fresh basil leaves.
