Chocolate cheesecake

Ingredients

- 2 cup graham cracker or digestive biscuit crumbs 480 ml graham cracker or digestive biscuit crumbs
- 3/4 cup butter (melted) 180 ml butter (melted)
- For the filling For the filling
- 12 oz semisweet chocolate 340 g semisweet chocolate
- 24 oz cream cheese (at room temperature) 680 g cream cheese (at room temperature)
- 1 1/4 cup sugar 300 ml sugar
- 3 eggs 3 eggs
- 2 tsp vanilla extract 9.9 ml vanilla extract
- 1 tbsp cocoa powder 15 ml cocoa powder
- 16 oz sour cream 455 g sour cream
Method
Prepare teh cheesecake base
Make the cheesecake base by combining the crumbs with the butter until smooth. Press the mixture on the bottom and sides of a 9 inch springform pan then chill until the filling is prepared.
Preheat oven to 300 degrees F (150 degrees C).
Make the cheesecake filling
Melt the chocolate in a bowl over simmering water.
In another bowl beat the cream cheese with an electric mixer on medium speed until light and fluffy. Start adding the sugar while mixging until it is well incorporated into the cheese.
Start adding the eggs, one at a time, mixing well after each addition. Add the melted chocolate, cocoa powder and vanilla essense and mix until blended. Finally stir in the sour cream and continue mixing until you get a uniform mixture. Pour the cheesecake mixture into the crust.
Bake the cheesecake
Bake the cheesecake for 1 hour and 40 minutes. Remove from the oven and place on a wire rack to cool. Chill for 5 to 6 hours (better overnight) before serving.
