Bittersweet chocolate sauce

Ingredients
- 3/4 cup heavy cream 180 ml heavy cream
- 1/2 cup whole milk 120 ml whole milk
- 1/4 cup water 60 ml water
- 2 tbsp corn syrup 30 ml corn syrup
- 1/4 cup cocoa powder (unsweetened) 60 ml cocoa powder (unsweetened)
- 1/2 tsp kosher salt 2.5 ml kosher salt
- 10 oz bittersweet chocolate (280 g; roughly chopped) 285 g bittersweet chocolate (280 g; roughly chopped)
- 1 tbsp unsalted butter 15 ml unsalted butter
- 1/2 tsp vanilla extract 2.5 ml vanilla extract
Method
In a medium saucepan over medium heat add the heavy cream, whole milk, water, corn syrup, cocoa powder and salt. Stir well simmer, whisking until the cocoa powder is completely dissolved, for about 5 minutes.
Remove from heat and add the chocolate, butter, and vanilla extract. Stir until well combined. Serve warm or cover with plastic wrap and refrigerate for a few days. Reheat the sauce in the microwave when needed or serve cold.
