Zucchini with garlic

Ingredients
- 2 tbsp olive oil 30 ml olive oil
- 1 1/2 lb zucchini 680 g zucchini
- 3 clove garlic (minced) 3 clove garlic (minced)
- 1/2 tsp dried crushed red pepper 2.5 ml dried crushed red pepper
- 1 tbsp fresh parsley (finely chopped) 15 ml fresh parsley (finely chopped)

Method
Cut the zucchini in half, crosswise, then cut each half lengthwise into 4 slices.
In a large skillet over medium heat, heat the olive oil. Add the zucchini and saute until it becomes light golden and tender, for about 5 minutes. Add the garlic and red pepper and cook stirring for about 1 minute. Season with sea salt to taste.
Transfer the zucchini to a serving platter, sprinkle with parsley, and serve.
