Zucchini alla Romana

Ingredients
- 4 cup sliced zucchini 960 ml sliced zucchini
- 2 clove garlic (whole) 2 clove garlic (whole)

- 2 tbsp Parmesan or Romano cheese (finely shredded) 30 ml Parmesan or Romano cheese (finely shredded)
Method
In a large saucepan cook the garlic cloves in hot oil until lightly browned. Discard the garlic and add the zucchini, dried mint or basil, salt, and pepper. Cook uncovered over medium heat for about 5 minutes, until the zucchini is crisp but tender.
Place in a serving dish, sprinkle with the Parmesan cheese and fresh mint and serve immediately.
