3 (1) 30 min Serves 4 - 6 Mexican
A simple, basic green chile sauce that uses roasted green chiles, garlic and onion. This sauce is first cooked, then processed in the blender. The result is a smooth, creamy sauce that is great with enchiladas.

Ingredients

  • 2 tbsp vegetable oil
  • 1/2 white onion, chopped
  • 2 tbsp flour
  • 2 cup roasted (peeled and chopped green chiles)
  • 4 garlic cloves, minced
  • 2 cup chicken stock
  • 3/4 tsp salt (adjust to taste)

Method

In a medium saucepan or skillet over medium high heat add the vegetable oil and onion and saute until soft translucent.

Add the flour and mix until well combined. Stir in the roasted green chiles, minced garlic, chicken stock and salt. Lower heat and simmer for 20 minutes.

Empty the sauce in a blender and process until smooth. You can use the sauce hot, with enchiladas or you can cool it down and refrigerate it for later.
