Homemade mild Italian sausage

Ingredients
- 3 lb ground pork butt 1.36 kg ground pork butt
- 2 tbsp minced garlic 30 ml minced garlic
- 1 1/2 tbsp paprika 22 ml paprika
- 1 1/2 tsp toasted fennel seeds 7.4 ml toasted fennel seeds
- 1 tbsp salt (adjust to taste) 15 ml salt (adjust to taste)
- 1 tbsp freshly ground black pepper 15 ml freshly ground black pepper
- 1 tsp cayenne pepper (adjust to taste) 4.9 ml cayenne pepper (adjust to taste)
- 1/2 tsp ground anise seeds 2.5 ml ground anise seeds
- 2 tbsp freshly chopped parsley 30 ml freshly chopped parsley
- 3 tbsp dry red wine 44 ml dry red wine

Method
Combine the ground pork, garlic, paprika, fennel seeds, salt, black pepper,
cayenne pepper, anise seeds, parsley and red wine in a large bowl and mix well until all ingredients are evenly combined. Refrigerate for least 24 hours.
If you plan to make sausages, stuff the sausage meat into the casings using an appropriate sausage making machine, otherwise use the sausage meat as needed.
You can refrigerate the sausages for up to 3 days or freeze them for up to 3 months.
