Orange and garlic chicken

Ingredients
- 4 chicken breasts, boneless and skinnless 4 chicken breasts, boneless and skinnless
- 1 tbsp olive oil 15 ml olive oil
- 1 tbsp fresh oregano 15 ml fresh oregano
- 1/2 tsp salt 2.5 ml salt
- 1/2 tsp black pepper (freshly ground) 2.5 ml black pepper (freshly ground)
- 2 tbsp olive oil 30 ml olive oil
- 3 tbsp dry (white wine) 44 ml dry (white wine)
- 1/4 cup fresh orange juice or blood orange juice 60 ml fresh orange juice or blood orange juice
- 2 garlic cloves, minced 2 garlic cloves, minced
- 1 tbsp fresh parsley (finely chopped) 15 ml fresh parsley (finely chopped)
Method
In a mixing bowl add 1 Tbsp of olive oil, the oregano, salt and black pepper. Mix thoroughly and then rub the mixture into the chicken. Place chicken in a bowl, cover with plastic wrap and refrigerate for at least 2 hours (you can do this the evening before).
Pour 2 Tbsp of olive oil into a crock-pot. Place the chicken in the crock pot and add remaining ingredients (white wine, orange or blood orange juice, garlic and parsley) over the chicken.
Cover and cook on low heat for 5 to 6 hours.
