Ingredients

- 2 tsp ground cumin 9.9 ml ground cumin
- 1/4 tsp ground allspice 1.2 ml ground allspice
- A pinch of cayenne A pinch of cayenne
- 2 tbsp ketchup 30 ml ketchup
- 2 tsp Worcestershire sauce 9.9 ml Worcestershire sauce
- 12 oz beer (350 ml) 340 g beer (350 ml)
- 1/2 cup coriander (cilantro; divided) 120 ml coriander (cilantro; divided)
- 1 tbsp lime juice 15 ml lime juice
- Salt and black pepper to taste Salt and black pepper to taste

Method
In a large skillet over medium-low heat add the meat and cook, stirring constantly for about 10 minutes, until well browned. Drain fat and return to heat.
Add the onions and bell pepper and cook for 5 minutes more, stirring occasionally, until soft. Add the garlic and cook for 30 more seconds.
While the onions and pepper are cooking, mix the tomato sauce, chipotle chile, smoked paprika, oregano, ground cumin, allspice, cayenne, ketchup and Worcestershire sauce in a blender until you get a uniform mixture. Pour the tomato mixture and beer over the cooked meat and stir well to combine. Bring to a boil, lower heat to medium-low and cook for about 15 minutes. Add the coriander and lime juice and season with salt and black pepper to taste. Continue cooking until you get the desired consistency.
Serve on warm buns topped with any of the additional condiments.
Add the onions and bell pepper and cook for 5 minutes more, stirring occasionally, until soft. Add the garlic and cook for 30 more seconds.
While the onions and pepper are cooking, mix the tomato sauce, chipotle chile, smoked paprika, oregano, ground cumin, allspice, cayenne, ketchup and Worcestershire sauce in a blender until you get a uniform mixture. Pour the tomato mixture and beer over the cooked meat and stir well to combine. Bring to a boil, lower heat to medium-low and cook for about 15 minutes. Add the coriander and lime juice and season with salt and black pepper to taste. Continue cooking until you get the desired consistency.
