Grilled chicken with basil

Ingredients
- 4 chicken breasts, boneless and skinnless 4 chicken breasts, boneless and skinnless
- 1 tsp black pepper (freshly ground) 4.9 ml black pepper (freshly ground)
- 1/2 cup butter (melted) 120 ml butter (melted)
- 1/4 cup fresh basil (chopped) 60 ml fresh basil (chopped)
- 1/2 cup butter (softened) 120 ml butter (softened)
- 1/4 cup fresh basil (chopped) 60 ml fresh basil (chopped)
- 1 tbsp Parmesan cheese (freshly grated) 15 ml Parmesan cheese (freshly grated)
- 1 garlic clove, minced 1 garlic clove, minced

Method
In a bowl, add the melted butter and 1/4 cup basil. Mix well and set aside.
Rub the black pepper into the chicken breasts and then brush the chicken with the basil flavoured butter, prepared above. Save any remaining butter to baste the chicken.
In another bowl mix the softened butter with the remaining 1/4 cup basil, Parmesan cheese, garlic, and salt. Blend well until the butter mixture is soft and uniform.
Grill the chicken over medium heat for 8 to 10 minutes on each side. Baste the chicken frequently with the melted basil butter.
Remove the chicken breasts from the grill, top with the basil and Parmesan butter and serve.

Cook's notes
This dish can be served with baked potatoes and a green salad for a complete meal.
