Tarragon wine sauce

A great cream wine sauce using tarragon. Great for fish dishes

Ingredients

  • 2 tbsp butter
  • 1 tbsp fresh tarragon (chopped)
  • 1 shallot, finely chopped
  • 2/3 cup dry white wine
  • 1/4 cup light cream
  • Salt and pepper to taste

Method

Melt the butter in a saucepan. Add the shallot and cook until soft. Pour in the wine, add the tarragon and season with salt and pepper. Simmer for 5 minutes. Place sauce in a food processor or blender and puree until smooth. Return to saucepan, stir in the cream and reheat before serving.
