Storing tomatoes

Store tomatoes at room temperature. For full flavoured tomatoes, let them ripen as much as possible. To speed up the ripening process of tomatoes, place them in a closed container or paper bag together with an apple or pear. The ethylene emitted by tomatoes as well as apples and pears helps the ripening process. When tomatoes have ripened, store them in the refrigerator. Bring them to room temperature before using for maximum flavour.
