A classic chili con carne recipe using roughly ground beef tenderloin or sirloin, onions, tomato paste and typical Mexican spices such as cumin and oregano.
 

Burritos are another Mexican favorite recipe, very similar to enchiladas. In this recipe, flour tortillas are filled with a beef steak and bean mixture, folded like an envelope, topped with a tomato based chili sauce and cheese and baked until the cheese melts. Burritos can be served as a starter or main dish, together with Mexican condiments.
 

Chicken flaoutas are flour tortillas filled with a cooked chicken, onion and cheese mixture, rolled up and fried in vegetable oil. This recipe is an adaptation of the Serrano cafe chicken flaoutas recipe. It is delicious and easy to make and can be served as an appetizer or main dish together with Mexican rice.
 

Beef chili con carne with red wine, Worcestershire sauce, tomatoes, chilies, cinnamon and red kidney beans, among other ingredients. Better if refrigerated for 1 or 2 days, as the flavors will develop during that time.
 

Pork shoulder slow cooked in the oven together with garlic, chipotle chiles, tomatoes, oregano and cumin. Serve with roast or baked potatoes and sour cream.  

A very popular sauce, used often in Mexican and Southwestern recipes, chipotle chiles in adobo sauce are stewed chipotle chiles. The sauce provides a smokey flavor with a mild heat to a variety of dishes. This homemade version of adobo sauce is easy to make and far more superior than ready made ones.
 

A great Mexican salsa with tomatillos (small green tomatoes widely used in the Mexican cusine) and chipotle chiles. The tomatillos are first roasted, then mixed with the chipotles, sauteed onion, coriander, vinegar and dried oregano. The salsa makes a great side dish with most Mexican dishes.
 

Chimichangas is another Mexican favorite. Flour tortillas are filled with a beef mixture and sauce, rolled up and deep fried in vegetable oil. They are served together with jalapeno peppers, lettuce, grated cheese, together with condiments such as pico de gallo, salsa, guacamole, etc. There are a lot of different types of chimichangas, depending on the filling, such as chicken chimichangas, beef chimichangas, etc. This recipe uses a combination of beef and chorizo sausage, a Mexican type of sausage that is quite hot and spicy.
 

Corn tortillas filled with cooked chicken, vegetables and enchilada sauce, topped with a mole sauce, sprinkled with cheese and baked in the oven. This recipe takes a while to make but is well worth the effort. The chicken enchiladas can be served with typical Mexican side dishes such as pico de gallo, guacamole sauce, fried rice and sour cream.
