Burritos are another Mexican favorite recipe, very similar to enchiladas. In this recipe, flour tortillas are filled with a beef steak and bean mixture, folded like an envelope, topped with a tomato based chili sauce and cheese and baked until the cheese melts. Burritos can be served as a starter or main dish, together with Mexican condiments.
 

Here is another great recipe for beef enchiladas. This one uses a ground beef chili mixture to fill the tortillas. You can adjust how hot the enchilladas will be by adjusting the amount of chili used in the recipe. The tortillas are filled with cheese and chili beef, rolled up and topped with extra chili beef, cheese and onion and then baked in the oven until the cheese melts. Corn tortillas filled with cooked chicken, vegetables and enchilada sauce, topped with a mole sauce, sprinkled with cheese and baked in the oven. This recipe takes a while to make but is well worth the effort. The chicken enchiladas can be served with typical Mexican side dishes such as pico de gallo, guacamole sauce, fried rice and sour cream.

This sauce is cooked and can be used in recipes that call for a tomato based sauce such as burritos, enchiladas or chimichangas.
