Refried beans are a typical Mexican dish that is used as a side dish or as an ingredient in many recipes. Pinto beans are used here but you can also use red kidney or borlotti beans instead. The beans have to be soaked and cooked first, before getting fried.
 

A classic Mexican chicken in mole paste recipe. The chicken is first boiled, then cooked in a sauce made with mole paste. Mole paste is a famous Mexican type of sauce that is made with a variety of ingredients including chiles, Mexican chocolate, raisins, almonds and much more. You can buy  ready made mole paste in jars from supermarkets or you can make your own (a recipe is included). The chicken in mole paste dish can be served with refried beans, corn tortillas and Mexican fried rice, or with condiments of your liking.
 

Pollo picante is chicken breasts cooked in a hot sauce made with onions, garlic, bell peppers, tomatoes, jalapenos, bay leaves and garlic. The sauce is quite hot as it uses Tabasco sauce, black pepper, cayenne pepper and jalapenos. If you fo not like hot dishes, reduce the amount of cayenne, black pepper and Tabasco used. For a complete meal serve this dish with Mexican fried rice, flour tortillas and a simple green salad made with celery and avocado.
 

A beef chile or chili con carne recipe, this time made the El Charro Mexican cafe way. The beef is cut into 1 inch cubes, coated in seasoned flour, browned and then slow cooked with a Colorado chili salsa, garlic and oregano. You can serve this delicious chili con carne dish with cornbread or flour tortillas and sour cream. This chili recipe is very easy to make, provided you have the Colorado red chili sauce ready, and is extremely delicious.

Chili con queso or cheese and chili is a famous dip made with cream cheese, jalapenos, tomatoes and spices, great with tortilla chips. The dip is easy to make and can be refrigerated for a few days.
