A favorite beef chili recipe, this one is made with chipotle, ancho and anaheim chiles, beef, bacon and a bunch of herbs and spices. This chili is not hot and is great for parties. If you want to make it hotter increase the amount of Chipotle chiles used and/or add some cayenne pepper.
 

A variation of the traditional macaroni and cheese recipe, this one uses Chipotle in adobo sauce in addition to the typical ingredients. The pasta is tossed in the sauce and baked in the oven until bubbly and brown on top.

Chimichangas is another Mexican favorite. Flour tortillas are filled with a beef mixture and sauce, rolled up and deep fried in vegetable oil. They are served together with jalapeno peppers, lettuce, grated cheese, together with condiments such as pico de gallo, salsa, guacamole, etc. There are a lot of different types of chimichangas, depending on the filling, such as chicken chimichangas, beef chimichangas, etc. This recipe uses a combination of beef and chorizo sausage, a Mexican type of sausage that is quite hot and spicy.

Carne Asada is a typical Mexican grilled marinated beef dish, served in tortillas with salsa and guacamole. The marinading process is used to tenderize the meat. Carne aside can be served with baked potatoes and refried beans for a complete main dish.
