Preserved lemons are lemons that have been preserved in
salt and lemon juice for at least 30 days. Many times, other spices are added to preserved lemons, such as
cinammon, black peppercorns, cloves, even sugar. Preserved lemons have a silky texture, a darker color and an intense, distinctive
flavor. They are a very popular ingredient in
Moroccan cuisine, especially in
chicken and lamb stews.
