Cheese enchiladas recipe 

A simple cheese enchiladas recipe, easy to do and great as a starter or main dish. Serve with guacamole sauce, sour cream, freshly chopped coriander and iceburg lettuce.

Chicken enchiladas with roasted tomato sauce recipe 

This is a variation of the chicken enchiladas verde that uses over roasted tomato sauce instead of the tomatillo (Verde) sauce. This traditional Mexican recipe using flour tortillas, first fried in vegetable oil, then stuffed with cooked chicken, oven roasted tomato sauce and chili tomato sauce, rolled up, topped with more tomato sauce and cheese and baked for a few minutes in the oven. The roasted tomato sauce (recipe included) takes 6 to 8 hours to prepare but the result is worth the effort. You can make extra tomato sauce and refrigerate it.

Taco sauce (for tacos, burritos or enchiladas) recipe 

A tomato based sauce good for tacos, enchiladas, burritos or any other Mexican dish that calls for a red sauce. The sauce can be made as hot or as mild as you like by adjusting the amount of cayenne and chili pepper used. You can also make more sauce by increasing the ingredients used. This recipe will make 1 cup of sauce.

Chicken enchiladas (with an ancho chile marinade) recipe 

Chicken enchiladas are chicken with enchilada sauce and cheese wrapped in a flour tortilla and baked in the oven. This chicken used in the recipe is first marinated in a marinade made of ancho chiles (a type of dried chiles), garlic, onion and spices. The chicken is then pan fried, sliced and used as a filling for the flour tortillas, together with enchilada sauce, onion and cheese. Enchiladas make a great dish when served with fried rice and Mexican condiments such as guacamole, sour cream, jalapeno peppers and salsa.

Chicken and sour cream enchiladas recipe 

Chicken enchiladas are flour tortillas filled with a chicken based mixture, topped with salsa and grated cheese and baked in the oven. Serve with fried rice and condiments for a complete meal.

Shrimp enchiladas recipe 

Enchiladas is one of the most well known and favorite Mexican dishes. They come in many variations such as chicken enchiladas, beef enchiladas, shrimp enchiladas or vegetable enchiladas. This recipe is for shrimp enchiladas. Corn tortillas are filled with shrimp, corn, green chiles and refried beans, topped with an enchilada sauce and shredded cheese and baked in the oven. The enchiladas are served together with cilantro, sour cream and lime wedges and make a great main dish.

Stacked beef enchiladas recipe 

Easy ground beef stacked enchiladas. The dish is a variation of the typical Mexican enchiladas dish and is made with layers of flour tortillas topped with ground beef, sour cream, green chiles and grated cheese. This recipe can serve 2 for main dish, or 4-6 for an appetizer. Adjust the amount of green chiles used to your liking.
