Avocado pasta salad recipeA delicious and healthy pasta salad using avocado.
Preparation time: 10 minutes, Cooking time: 5 minutes, Serves: 4
Ingredients2 medium avocado, roughly chopped 300g penne or other similar type pasta 2 pickled red bell peppers, chopped 4 Tbsp capers, small (roughly chopped them if large)
For the sauce 4 Tbsp red wine vinegar 12 Tbsp olive oil 1/2 tsp sugar 2 tsp dried dill
Salt and black pepper to taste
Grated parmesan cheese
DirectionsCook the pasta according to instructions on the packaging. Drain, rinse in cold water, drain again and set aside.
To make the sauce, combine the olive oil, vinegar, sugar, dill, salt and pepper and blend with a hand blender or stir vigorously using a fork or spoon.
In a large bowl, add the pasta, avocado, pickled red peppers and capers. Pour the sauce over, toss well until the ingredients are coated evenly, top with the grated parmesan cheese and serve.
Notes and tipsMake sure you rinse the pasta in plenty of cold water after it is finished cooking. This will stop it from overcooking.
