Fast chicken cacciatore (Pollo cacciatore) recipe Share this recipe on FacebookA simple, delicious and fast Italian dish, chicken or pollo cacciatore is chicken breasts, browned in vegetable oil, then stewed for 30 minutes with white sliced mushrooms, garlic and tomatoes. Serve with freshly made garlic bread or pasta for a quick and easy classic Italian dish.
Preparation time: 5 minutes, Cooking time: 35 minutes, Serves: 4 - 6
Ingredients
3 Tbsp olive oil
4 chicken breasts, skinned and halved
2 cups sliced button mushrooms
2 cloves garlic, sliced
2 (14 oz.) cans Italian style tomatoes 1 (6 oz.) can tomato paste
1 tsp dried basil
Salt and black pepper to taste
Directions In a frying pan over medium high heat add the olive oil and chicken breasts and fry until brown, turning occasionally. Remove chicken and drain on paper towels.
Add the sliced mushrooms, garlic, tomatoes, tomato paste and basil and season with salt and black pepper to taste. Fry for 2 minutes, turning constantly.
Return chicken breasts to the pan, cover, lower heat and simmer for 30 minutes.
Serve on top of penne or similar shaped pasta or with freshly made garlic bread.
