Strawberry mascarpone tart recipe

A simple and refreshing strawberry and Mascarpone tart.
Preparation time: 10 minutes, Cooking time: 15 minutes, Serves: 8 

Ingredients

1 sheet frozen puff pastry, thawed
8 ounces mascarpone cheese, softened
1 cup sugar
1 tablespoon fresh lemon juice
1 cup whipping cream, whipped

Fresh strawberries, stemmed and sliced in half
Icing sugar (for dusting)

Directions

Preheat oven to 400 degrees F.

Line a 9-inch tart pan with removable bottom with the puff pastry sheet, trimming the latter to fit. Place in the oven and bake for 15 minutes, until the pastry is golden brown. Remove from the oven and deflate by placing a pie plate and a heavy item on top of the crust. Set aside to cool.

Combine the mascarpone, sugar and lemon juice in a medium bowl. Fold in the whipped cream and spread over the cooled puff pastry crust. Refrigerate until ready to serve.

Before serving, decorate the top with sliced fresh strawberries and lightly dust with icing sugar.
