Zucchini alla Romana recipe

Zucchini fried in garlic flavoured oil, served with grated Parmesan or Romano cheese.
Preparation time: 5 minutes, Cooking time: 5 minutes, Serves: 6 

Ingredients

4 cups sliced zucchini
2 cloves garlic, whole
2 tsp olive oil
1 tsp dried mint or dried basil, crushed
1/4 tsp salt
1/8 tsp black pepper
2 Tbsp Parmesan or Romano cheese, finely shredded

Directions

In a large saucepan cook the garlic cloves in hot oil until lightly browned. Discard the garlic and add the zucchini, dried mint or basil, salt, and pepper. Cook uncovered over medium heat for about 5 minutes, until the zucchini is crisp but tender.

Place in a serving dish, sprinkle with the Parmesan cheese and fresh mint and serve immediately.
