Authentic chili con carne recipe

An authentic beef chili recipe using habenero chili peppers, tomatoes, onions, cumin and oregano, cocoa pwder and chili beans. The result is quite hot but extremely delicious!
Preparation time: 10 minutes, Cooking time: 120 minutes, Serves: 8 

Ingredients

6 dried habenero chilli peppers
1 cup of water

3 lbs boneless chuck (or similar stewing cut) finely diced
6 Tbsp olive oil

4 medium onions, chopped
4 garlic cloves, minced
1 1/2 tsp cumin
1 tsp dried oregano
1 large can chopped tomatoes
1 large can chili beans
1 Tbsp cocoa
2 bay leaves, crushed

Directions

Toast the habenero peppers for 1 to 2 minutes in a skillet over high heat, turning often. Let them cool and crush them. Put them in a small pan with 1 cup of water, bring to a boil and simmer for 5 minutes. Drain and set aside.

 In a Dutch oven add the meat and olive oil and saute until lightly brown. Add the onions and garlic and cook until the onions are soft, stirring occationally. Add the cumin and oregano and cook for 1 minute more. Add the tomatoes, chili beans, cocoa, bay leaves, habenero chili peppers and enough water to barely cover all ingredients and bring to boil. Lower heat, cover and simmer for about 2 hours, stirring occationally.

Serve with sour cream, freshly chopped coriander and Mexican fried rice.

Notes and tips

You can substitute the habenero chilli peppers with chilli powder and cayenne pepper (the amounts you use depend on how hot you like your chilli).

The original recipe uses dried pinto beans that are soaked, boiled in water and then cooked with tomatoes. This recipe uses all the ingredients used in the original recipe except the pinto beans. Instead, canned red kidney beans are used. The result is not the same but it is equally delicious.
 
Bob's chili con carne  A beef chili recipe that is made using a variety of spices, added at different steps during the cooking process. This recipe uses a lot of ingredients but is fairly easy to execute. Notice that no beans are used here, just the beef and the spices.
 
Chasen's famous chili con carne  This is the chili con carne recipe of the famous restaurant Chasen's. This recipe uses both beef and pork meat, spices, parsley, butter, tomatoes and bell peppers and instead of red kidney beans, is uses pinto beans. You can substitute the pinto beans with red kidney beans or borlotti beans but if you want to be as close to the original recipe as possible, try to use the pinto beans.
