Chicken chimichangas recipeChicken chimichangas are a delicious and extremely easy to make Mexican dish. Flour tortillas are filled with cooked chicken, onion and cheese and deep fried until crisp and golden brown. Serve with fried rice and condiments such as sour cream, guacamole and salsa for a complete meal.

Ingredients2 chicken breasts, cooked and shredded 2 cups mild cheddar or Monterrey Jack cheese, shredded 2/3 cup onions, chopped
8 (12 inch) four tortillas Vegetable oil for deep frying
2 cups lettuce, shredded Sour cream Guacamole Salsa DirectionsCook the chicken slowly, in water with some salt, pepper, garlic and onion. Let it cool down and then shred it using your fingers or a fork.
Prepare the chimichangas Lay a tortilla on a plate and spoon 1/8th of the chicken along the center. Top with cheese and onion. Fold in the 2 sides like an envelope, then roll up the tortilla and secure using a woodden toothpick. Repeat the process for the remaining tortillas.
Fry the chimichangas Heat about 2 inches of vegetable oil in a deep frying pan. Cook chimichangas for about 1 minute on each side, until golden brown and crisp. Remove, place on paper towel to absorb excess oil and keep warm.
Serve with lettuce, sour cream, salsa, guacamole or other condiments of your choice.
For a complete meal, serve with Mexican fried rice.
