Mexican fried rice recipe

A Mexican fried rice recipe that is easy to prepare and great to serve with most Mexican dishes. The rice is first toasted, then fried with onions, garlic and bell pepper and finally cooked in tomato and chicken broth.
Preparation time: 5 minutes, Cooking time: 25 minutes, Serves: 4 

Ingredients

4 Tbsp vegetable oil
2 cups rice (long grain, white, uncooked rice)
1 cup finely chopped onion
1 cup finely chopped bell pepper (red, green, yellow or combination)
2 cloves garlic, minced
4 cups chicken broth
1 cup tomato puree
2 tsp of salt (or to taste)

Directions

In a frying pan add the vegetable oil and bring to a heat. Add the rice and cook until it turns golden. Add the onion, bell pepper, and garlic and saute, turting often. Add the chicken broth and tomato puree, season with salt and cook for 15 - 20 minutes on very low heat until the rice is tender and the liquid has been absorbed. Serve with other typical Mexican dishes such as chimichangas, burritos, enchiladas e.t.c.
