Barking Dog Burritos recipe 

An excellent alternative to beef or chicken burritos, these burritos have vegetables as the main ingredient. This vegetarian version of burritos uses steamed onion, broccoli, zucchini and tomatoes together with cheese and guacamole sauce. The burritos in this recipe are not baked but you can do it if you like. Assemble the burritos and bake for 10 minutes, add some more cheese on top and bake for some more, until the cheese melts. Serve as always with extra guacamole sauce and salsa. The burritos can be served as an appetizer or even a main dish.

Basic black beans recipe 

A traditional Mexican / Tex-Mex recipe for black beans where the beans are cooked with Chipotle chillies, carrot, onion, garlic and spices for around 2 1/2 hours. Note that the beans need to be soaked overnight so make sure you start a day ahead.

Chicken fajitas (chicken fahitas) with lime and tequila recipe 

A chicken version of the famous Mexican fajitas. It uses chicken breast, bell peppers and onion as main ingredients and a variety of spices. The chicken has to be marinated for at least 6 hours so it is good to prepare it a day ahead and let it marinate overnight.

Beef steak fajitas (steak fahitas) using skirt steak recipe 

The traditional beef steak fajitas recipe, using skirt steak. Skirt steak is quite a tough meat to eat, so to tenderize it, it is marinaded in tequila, oil, lime juice and spices for several hours (you can marinate the steak overnight for best results). The steak is cooked over coals and served with lightly fried bell peppers and onions.

Beef steak fajitas (beef fahitas) using rump steak recipe 

Another beef steak fajitas recipe using rump steak (or similar) instead of skirt steak. Whereas the traditional beef steak fajitas recipe requires that the steak is cooked over coals, in this recipe, the steak is fried in a skillet or frying pan. The beef steak is first marinated for several hours with oil and spices and then cooked for a few minutes.

Chimichangas Supreme recipe
