Chicken enchiladas (with an ancho chile marinade) recipe 

Chicken enchiladas are chicken with enchilada sauce and cheese wrapped in a flour tortilla and baked in the oven. This chicken used in the recipe is first marinated in a marinade made of ancho chiles (a type of dried chiles), garlic, onion and spices. The chicken is then pan fried, sliced and used as a filling for the flour tortillas, together with enchilada sauce, onion and cheese. Enchiladas make a great dish when served with fried rice and Mexican condiments such as guacamole, sour cream, jalapeno peppers and salsa.

Lamb barbacoa recipe 

Another great Mexican recipe, lamb barbacoa or barbequed lamb is lamb marinated in a chile sauce, slow cooked in the oven for 3 1/2 to 4 hours and served in a flour tortilla with onion, coriander and Mexican salsa. The original recipe called for cooking the meat in a pit, over a pot with water that was sitting on hot coals. The same method can be used to make pork barbacoa.

Red beans and rice recipe 

Texas style red beans cooked with garlic, onion, green bell pepper, Chorizo sausage and herbs, served on top of cooked rice. If using dried beans, have in mind that they need to be soaked overnight, so do that the previous day. Otherwise you can use canned beans and save the soaking and most of the cooking time.

Chipotle chilli con carne (beef chilli with Chipotle chiles) recipe 

Chile con carne, or chilli with meat, is one of the most popular Mexican or Tex-Mex recipes. It is basically a spicy meat stew with lots of spices. This recipe uses Chipotle chiles, a dried, smoked Jalapeno type of chile and has a great smokey flavor. The chilli takes quite some time to cook, since the meat that is being used is not tender enough - a long cooking process is therefore required to tenderize the meat. Chilli refrigerates well for 1 or 2 weeks and can be frozen for one or two months. Refrigerating chili for at least 24 hours actually improves its taste and the extra time allows for the flavors to enhance.
