Aioli sauce is a garlic flavoured mayonaise. Main ingredients are garlic, olive oil, egg yolks and bread crumbs. There are variations of aioli sauce where boiled potatoes are used instead of breadcrumbs. Cooked egg yolks can also be used instead of raw ones.
Preparation time: 5 minutes, Cooking time: 5 minutes, Serves: 0
2 egg yolks
2 Tbsp lemon juice
2 Tbsp bread crumbs
4 large garlic cloves
1/2 tsp sugar
1 cup olive oil
Add the egg yolks, lemon juice, bread crumbs, garlic cloves and sugar in a blender. Process until you get a thick mixture. Start adding the olive oil, very slowly. When the mixture has thickened enough, you can add the remaining olive oil faster. If the mayonaise is too thick, add 1 or 2 teaspoons of boiling water and stir.
This sauce is great on potatoes or fish dishes.
