Homemade donuts recipe

Easy homemade doughnuts.
Preparation time: 120 minutes, Cooking time: 20 minutes, Serves: 8 - 12 

Ingredients

For the milk mixture
2 cups milk
1/2 cup unsalted butter
1 Tbsp salt
1 cup sugar

For the yeast mixture
1 package dry yeast
1 tsp sugar
1/4 cup warm water

For the doughnuts dough
1 tsp baking powder
1/2 tsp baking soda
1 cup mashed potatoes
3 egg yolks
8 cups all purpose flour

Directions

Make the doughnut dough
Scald the milk and stir in the butter, salt, and 1 cup of sugar. Empty the mixture in a large bowl and set aside.

In a small bowl add the yeast, sugar and warm water. Stir well and set aside for 5 minutes. Pour the yeast mixture into the milk mixture and stir well. Add the baking powder, baking soda, mashed potatoes, egg yolks, and 2 cups of flour and beat with an electric mixer at medium speed for 2 to 3 minutes, until the mixture is smooth.

Slowly start adding the remaining flour, beating well after each addition. When the dough is soft, place it in a well greased bowl, cover with a damp kitchen cloth and let it rise for 1 hour.

Empty the dough on a well floured surface ad roll to 1/4 inch thick. Cut out doughnuts using a cookie cutter or similar, place on a baking sheet, cover and let rise for one more hour.

Fry the doughnuts
Fry the doughnuts in vegetable oil in batches (do not overcroud the pan) until golden brown. Remove from pan and continue with the remaining dough.

To coat the doughnuts with sugar and cinnamon
While the doughnuts are hot add them to a paper bag together with sugar and cinnamon and shake to coat all over. Use about a tablespoon of granulated sugar and 1/2 teaspoon of cinnamon for every 6 to 8 doughnuts. Remove doughnuts and continue (use the same paper bag and add as much sugar and cinnamon as needed).

Serve the doughnuts warm.

Notes and tips

Optional doughnut finishes

Icing sugar glaze
To glaze doughnuts use 1 cup icing sugar dissolved in 1/3 cup hot water and 1 teaspoon vanilla essense. Once the sugar is dissolved use a spoon to drizzle it over the doughnuts.

Chocolate glazed doughnuts
Heat 1/2 cup of cream with 1 tablespoon of golden syrup or corn syrup and pour the mixture over a cup of finely grated dark chocolate. Stir well until the chocolate is melted and the mixture is smooth and silky, then drizzle over the doughnuts.

Strawberry filled doughnuts
You can also cut doughnuts in half and spread them with your favorite jam.

To freeze doughnuts

Doughnuts can easily be frozen. To freeze them follow the procedure below:

- Prepare and cook doughnuts as described above (do not glaze or coat with sugar)
- Lay the doughnuts in a single layer on a baking sheet and freeze
- When completely frozen, put in a freezer bag, seal well and freeze
- When ready to eat, heat them in the oven at 400 degrees F (205 C) for 8 to 10 minutes
- Glaze, coat them in sugar or fill them with jam and serve
