Berry Tiramisu (non alcoholic) recipe Share this recipe on FacebookAnother non-alcoholic Tiramisu recipe, this one uses a berry compote (made from an assortment of berries such as strawberries, blueberries, rasberries etc) together with mascarpone cheese, cream and sugar. You can use whatever berries you can find, as long as they are fresh. The preparation is easy and you can easily adjust the quantities to make more. Besides not using alcohol, this Tiramisu does not use coffee either so this makes it a great desert for kids.
Preparation time: 20 minutes, Cooking time: 10 minutes, Serves: 10 - 12
Ingredients 6 cups fresh strawberries or blueberries 2/3 cup granulated sugar 3 Tbsp fresh lemon juice 2 cups fresh raspberries
40 savoiardi (Italian ladyfingers) 16 oz (450 g) mascarpone cheese, at room temperature 2/3 cup icing sugar 2 cups heavy cream
Directions ake the berry compote In a non-reactive saucepan over medium heat add the strawberries or blueberries, the granulated sugar and the lemon juice. Bring to a boil and cook for 5 to 6 minutes, stirring ocationally, until the sugar is dissolved and the berries soften up and release their juices. Add the raspberries and cook for 2 more minutes. Remove from heat and set aside to cool.
Make the mascarpone cream In a large bowl add the mascarpone cheese, heavy cream and icing sugar.
Beat using an electric mixer until you get a smooth mixture.
Assemble the Tiramisu Lay half of the ladyfingers on a 9 x 13 inch or similar serving dish. Pour half of the berry sauce over the ladyfingers and spread evenly. Top with half of the Mascarpone cream and again, spread evenly over the berry compote.
Repeat with the remaining ladyfingers, berry compote and Mascarpone cream.
Cover with plastic wrap and refrigerate for at least 4 hours (better if refrigerated overnight).
