Homemade Italian pepperoni sausage for pizzas recipe

A perfect recipe for homemade Italian style pepperoni sausage, great as a pizza topping. The procedure of making the sausage is simple and the result is delicious. To save time you can make the sausage mixture the day before and keep it refrigerated until you are ready to use it.

Ingredients

1 lb (500 g) ground pork (use pork butt)
10 oz (300 g) lean ground beef (chuck, round or shank)
3/4 Tbsp salt
1/2 Tbsp sugar
3/4 tsp cayenne pepper
1 Tbsp sweet paprika
1 tsp crushed anise seed
3 garlic cloves, finely minced
2 Tbsp red wine vinegar
1/3 tsp ground black pepper

Directions

In a large bowl add all the ingredients and stir well using a wooden spoon at the beginning, then your hands, until all the spices are distributed evenly throughout the pork and beef and the sausage mixture is uniform. Cover with plastic wrap and refrigerate for a minimum of 6 hours. The sausage mixture can keep for up to 24 hours in the refrigerator of several days in the freezer.

i noticed that there is no preservative in your recipe, is it safe, the taiwanese recipe also doesnt use any preservatives. please inform me, thank you so much.

The vinegar acts as a preservative... If you keep it in the refrigerator and use it within 3 to 4 days you should have no problem.

i tried this recipe but its hard, i used everything even the exact meat. what can i put to make it not so hard, my daughter said that pepperoni is supposed to be hards really, is that true? but, i can say that its deliceous.

so what ingredient am i missing?

I don't think you are missing any ingredients. It is just minced meat with spices; how hard can it be? If you are talking about the cooked pepperoni, maybe you overcook it. That could make it harder.

You put in on pizzas (as a topping) before cooking so it gets cooked with the rest of the ingredients.
