Homemade mild Italian sausage recipe

Easy, homemade mild Italian sausages, great for pizzas, pasta or other Italian dishes.

3 lb ground pork butt
2 Tbsp minced garlic
1 1/2 Tbsp paprika
1 1/2 tsp toasted fennel seeds
1 Tbsp salt (adjust to taste)
1 Tbsp freshly ground black pepper
1 tsp cayenne pepper (adjust to taste)
1/2 tsp ground anise seeds
2 Tbsp freshly chopped parsley
3 Tbsp dry red wine

Pork casings (optional)


Combine the ground pork, garlic, paprika, fennel seeds, salt, black pepper, cayenne pepper, anise seeds, parsley and red wine in a large bowl and mix well until all ingredients are evenly combined. Refrigerate for least 24 hours.

If you plan to make sausages, stuff the sausage meat into the casings using an appropriate sausage making machine, otherwise use the sausage meat as needed.

You can refrigerate the sausages for up to 3 days or freeze them for up to 3 months.
