Italian crock pot chicken recipe

An easy, healthy and low fat Italian chicken recipe.
Preparation time: 10 minutes, Cooking time: 480 minutes, Serves: 4 


2 lb chicken pieces, skin removed
3 cups fresh mushrooms, sliced
1 large onion, chopped
2 cloves garlic, minced
1 cup red wine (preferably a Merlot wine)
1 can tomatoes, chopped or crushed
3 sprigs of fresh thyme (or 1 tsp dried thyme)
4 fresh basil leaves, chopped (or 1 tsp dried basil)
1 Tbsp fresh oregano (or 1 tsp dried oregano)
A pinch of red chili flakes
1 tsp sugar
1/4 tsp salt
1/4 tsp black pepper, freshly ground


Place the chicken pieces in a crock pot. Place the onion, garlic, and mushrooms over the chicken, in layers. Add the remaining ingredients (tomatoes, wine, basil, oregano, thyme, red chili flakes, sugar, salt, black pepper), cover and cook on low heat for 7 to 8 hours, or on high heat for 3 1/2 to 4 hours.

Serve with pasta and a simple green salad.
