Spaghetti carbonara recipe

A variation of this famous Italian spaghetti carbonara recipe that uses ham instead of bacon.
Preparation time: 5 minutes, Cooking time: 10 minutes, Serves: 4 

Ingredients

6 slices ham, chopped
1/2 c fresh parmesan cheese, grated
2 eggs
2 Tbsp butter
1 Tbsp olive oil
1 clove garlic, crushed
freshly ground pepper, to taste
1 pack of spaghetti

Directions

Cook spaghetti in lots of boiling salted water, according to instructions on package.

While the pasta is cooking, melt the butter in a skillet with the olive oil. Add the garlic and ham and cook until garlic is soft, but not brown. Remove from heat.

Beat the eggs with 1/4 cup of the parmesan cheese and freshly ground black pepper.

When the spaghetti is done, drain and immediately toss in the egg mixture so that the eggs will be cooked. Drain about 1/2 of the liquid from the ham/garlic sauce and add the rest to the spaghetti with the rest of the parmesan. Toss well. Serve with more freshly ground black pepper.

Notes and tips

The black pepper is important in this recipe so add lots of it, freshly ground.
