Basic cream gravy recipe

A simple, basic cream gravy recipe. Use this gravy on top of fried chicken, mashed potatoes, steamed vegetables or anything else you want.
Preparation time: 0 minutes, Cooking time: 10 minutes, Serves: 4 

Ingredients

2 Tbsp bacon grease or vegetable oil
2 Tbsp plain flour
1 1/2 cups milk (use full fat milk)
Salt and black pepper to taste

Directions

Heat the fat in a skillet over medium high heat. Add the flour and cook, stirring constantly until a thick paste is formed.

Start adding the milk, slowly, mixing it into the flour paste using a wire whisk or spoon and breaking up any lumps. Lower heat and continue cooking and stirring for 2 to 3 minutes more, until the souce is thick enough. Season with salt and pepper to taste and stir more.

Note that you can adjust the consistency of the gravy by adjusting the amount of milk used - use less milk for a thicker souce, more for a thinner souce.
